Cardamom Grapefruit Spark

Ingredients

  • 45mL tequila (reposado style tequila recommended)
  • 30mL cardamom simple syrup 
  • 15mL fresh lime juice
  • Bundaberg Pink Grapefruit
  • mint leaves and grapefruit slice (garnish)

How to make cardamom simple syrup:

  1. Lightly press green cardamom pods with the back of a spoon to release their aromas. Do not grind.
  2. Add 200mL water, 200mL sugar and the cardamom pods to a small saucepan. Warm over medium‑low heat, stirring occasionally, until the sugar has dissolved and the mixture just begins to simmer.
  3. Remove from the heat and allow to cool for 15–20 minutes to deepen the flavour.
  4. Strain into a clean bottle or jar, discarding the solids.

  • Ice

    Step 1

    Fill a hurricane glass with ice.

  • Shake

    Step 2

    Add the tequila, cardamom syrup and lime juice to a cocktail shaker. Fill with ice and shake lightly for 8-10 seconds, until chilled.

  • Pour

    Step 3

    Strain the contents of cocktail shaker over the hurricane glass, filling remaining glass with Bundaberg Pink Grapefruit.

  • Enjoy

    Step 4

    Gently stir once to combine, garnishing with grapefruit wedge and mint. Enjoy!
