Serves 4 4 x 170g kingfish fillets, skin on salt and pepper 2 Tbsp extra virgin olive oil 150ml Bundaberg Ginger Beer 2 bunches asparagus, trimmed 1 lemon, zested ¼ bunch thyme finely chopped 1 cucumber, finely diced 1 red capsicum, finely diced ½ red onion, finely diced ¼ bunch mint, chopped |

1 Season the kingfish with salt and pepper, then drizzle with a little olive oil. Cook on a ribbed griddle for 2 minutes each side, until just sealed. Pour over the Bundaberg Ginger Beer and baste well, until glazed. Cook until the fish is just firm to touch. 2 Toss the asparagus in the remaining olive oil and barbecue until lightly blackened. Once cooked, toss with lemon zest and thyme, then season with salt and pepper. 3 Combine the cucumber, capsicum, onion and mint. Serve the kingfish on a pile of asparagus with a spoon of salsa. |

Heat the oil gently Coat the green prawns in the flour and thread onto bamboo skewers (Do NOT pre-soak the skewers. Dip the flour coated prawns into the batter mix, shake of the excess batter and deep fry until golden.
Serve with a dipping sauce of your choice.
Serves 3-4 as an entree.

Beat the egg lightly with a whisk. Beat in the ginger beer, then add the dry ingredients, whisking until smooth. Cover and let stand for 25 to 30 minutes before using. Cut chicken breasts in half lengthways. Heat oil in 10 inch skillet over medium-high heat until oil reaches desired temperature. Using tongs to hold chicken strips, dip in batter; allow excess to drip off. Remove and carefully lower, one by one, into the hot oil. After about 1 minute, turn the strips. Continue to turn the strips occasionally until they are golden, cooking for a total of 4 to 6 minutes. Transfer to a paper towel lined tray. Pat more towels on top to absorb excess oil. Serve immediately with aioli or sweet chili sauce.

In a large bowl, place meat, 1/4 cup of Ginger Beer, egg, breadcrumbs, parsley, mustard, Worcestershire sauce, hot pepper sauce, 1/2 tsp of salt and pepper. Mix together until everything is combined well. Divide mixture into 4 pieces and form patties. Fry or grill burgers for 6 to 7 minutes each side until cooked through. To prepare mushrooms and onions, heat butter or margarine in a large frying pan over medium heat. Add onions and stir frequently until onions begin to soften. Add sugar and continue to stir. Add mushrooms and saute' for a few minutes. Add remaining Ginger Beer and 1/2 tsp of salt. Simmer on low for about 15 minutes, stirring every few minutes. Bundaberg Ginger Beer (accept no substitutes) 1 fresh lime Mint leaves Ice 2 shots white rum (Bacardi is best) |
| Instructions |
| Squeeze lime juice into a tall glass then chop the squeezed lime into 18 pieces and add to glass. Tear a handful of mint leafs into small pieces and add to glass. Add 2 shots of white rum. Ice, 6 large cubes works well. Top with tasty and refreshing Bundaberg Ginger Beer. Return to BBQ and check on steaks while enjoying a refreshing blend of flavors for summer enjoyment. |
